Dr. D's Immune Boosting Veggie Saute
Ingredients:
- 1 cup chopped Mushroom mix: shitake, oyster, button, portobella
- 3 cups Leafy greens: swiss chard, kale, spinach, bok choy
- 2/3 cup chopped onion
- 3 cloves chopped garlic
- 2 tablespoons extra virgin Olive oil
- 1/2 teaspoon Tamari
- 1/2 teaspoon Turmeric powder
- In a large non-Teflon pan add olive oil, chopped onions, and garlic on medium heat.
- Saute until soft (2-3 minutes).
- Add mushrooms and leafy greens.
- Saute until soft but still maintaining their color (3-4 minutes).
- Add tamari and turmeric and combine as heat is turned off.
- Let sit for 1 minute and enjoy!
Dr. D's Nourishing Soup
Ingredients:
- 3 cloves chopped garlic
- 1 large white or yellow onion, chopped
- 2 celery sticks, chopped
- 2 carrots, chopped finely
- 3 tablespoons organic butter or olive oil
- Half head of cauliflower, chopped
- 2 leeks, chopped
- 2 cups organic chicken or vegetable stock
- Chopped parsley for garnish
- Add butter or oil, onions, garlic, celery, carrots and leeks to large pot.
- Simmer on medium heat until soft. Add salt and pepper to taste, if you prefer.
- Add broth and cauliflower and bring to a boil until cauliflower is softened.
- Keep on medium heat until desired consistency is reached (for a creamy texture you may turn off heat and use a hand blender to combine).
- Add parsley to garnish, serve, and enjoy!
