Recipe: Split Pea Soup
Serves: 6
Ingredients:
- 1 medium yellow onion, diced
- 2 medium carrots, peeled and chopped, 1/4 inch thick pieces
- 1 medium sweet potato, peeled and cut into 1/2 inch pieces
- 2 cups dried split peas, rinsed (preferably soaked overnight)
- 8 cups chicken or vegetable broth
- 3 Tablespoons extra virgin olive oil
- A sprinkle of chili powder to taste
- sea salt to taste
- pepper, fresh ground to taste
- In a large soup pot warm the olive oil over medium-high heat. Saute the onion until translucent (approximately 5 minutes).
- Add the carrots, sweet potato and saute for an additional 5 minutes.
- Add the broth, rinsed split peas, salt, pepper and chili powder. Stir until evenly blended. Bring to a boil then reduce to simmer. Cook for 30-40 minutes stiring occasionally until split peas are cooked through and begin to dissolve. Serve with some sauteed kale on the side for extra rich vitamins, minerals and fiber!
