Summer Salad with Seasonal Fruit
Serves: 6
Ingredients:
- 10 oz arugula (or other desired salad greens)
- 1 organic cantaloupe*, skin removed and cut into thin wedges or cubes
- 4 tablespoons extra-virgin olive oil
- 1 organic lemon, zest and juice
- 2 teaspoons agave nectar
- Sea salt to taste
- Black pepper to taste
- 1/4 cup pomegranate seeds
- 1/4 cup pine nuts
- In a small jar or bowl, combine lemon zest and juice with olive oil, agave nectar, sea salt and pepper; whisk to combine ingredients.
- Wash arugula (or salad greens) and remove stems; place in a large salad bowl.
- Add pomegranate seeds, cantaloupe wedges or cubes, and pine nuts; toss with dressing, serve and enjoy!
