Summer Salad with Seasonal Fruit

Serves: 6

Ingredients:

  • 10 oz arugula (or other desired salad greens)
  • 1 organic cantaloupe*, skin removed and cut into thin wedges or cubes
  • 4 tablespoons extra-virgin olive oil
  • 1 organic lemon, zest and juice
  • 2 teaspoons agave nectar
  • Sea salt to taste
  • Black pepper to taste
  • 1/4 cup pomegranate seeds
  • 1/4 cup pine nuts
  1. In a small jar or bowl, combine lemon zest and juice with olive oil, agave nectar, sea salt and pepper; whisk to combine ingredients.
  2. Wash arugula (or salad greens) and remove stems; place in a large salad bowl.
  3. Add pomegranate seeds, cantaloupe wedges or cubes, and pine nuts; toss with dressing, serve and enjoy!
*Substitute with any seasonal fruit.
